To save our pennies to buy a house, J and I have committed to eat in every night this week. Last night we got lazy and simply sauteed some broccoli and garlic in soy sauce and grilled some Trader Joe’s salmon patties for salmon burgers. But Tuesday, I had a bit of inspiration – two pork chops defrosting in my fridge. I hate wasting food andi know it’s a cardinal sin and potential health hazard to refreeze defrosted meat so I had to think of something. Once again, Scotte saves the day. I browse through his archives (which has a whole separate pork section) and find pork fajitas. PERFECT!
Here’s how the evening went:
4:45 pm – Arrive home. Stare at pork. Realize pork tastes best when brined. Throw pork in a bowl with 1/2 cup of orange juice, 1/2 cup of lime juice, 1/4 cup of soy sauce, and a few tablespoons of sambal olek.
5:00 pm – Go to the gym
7:30 pm – Get home from the gym. Julienne red onions, red bell pepper. Brush whole green onions with oil.
8:00 pm – Pat dry pork chops. Saute onions and pepper with cumin and chile powder. Grill green onions on the grill pan.
8:10 pm – Grill pork chops, 4 minutes a side.
8:18 pm – Take pork chops off the heat and cover with foil to rest. J heats up with totillas (Trader Joe’s corn tortillas!) while I get the fixin’s ready (tomatoes, cheese, salsa)
8:25 pm – assemble and eat.
