I don’t know about the rest of you but we have meal nights centered around particular dish. It could be the Alsatian tart with arugula that pairs with a nice fritatta. It could be a tofu or chicken cutlet with mashed cauliflower. It could be breakfast for dinner (almond meal pancakes, sausage, and toast). But our the meal night that brings us the most joy is taco salad night. It’s fresh, hearty, filling, crunchy, and flavorful all in one big bowl. There is something incredibly satisfying about eating a salad that is a meal. The great thing about taco salad night is that it is a fridge cleaner. Whatever vegetables you have in the fridge, throw them in. Here are the components:
Essentials: taco meat, tortilla chips, shredded cheese, lettuce, some form of salad dressing
Add ons: cilantro, chopped tomatoes, chopped bell peppers, scallions, cucumbers, shredded carrots and the list goes on.
Sadly, we can’t give you a recipe for taco meat because it is an amorphous combination of ground turkey, chili powder, cumin and other things that change with the weather and our mood. But here’s a link to my go to salad dressing – salsa dressing.
