Monday and Tuesday I was at a work retreat so no cooking.
Baked fish with romesco sauce – red bell peppers
Oh how I heart romesco sauce! It’s a great peppery all purpose sauce for things that are bland like chicken or fish. It’s super easy – 2 roasted red bell peppers with the skins pulled off, 2 cloves of garlic, 1 slice of any kind of white bread soaking in about 1/4 cup of sherry vinegar, a pinch of salt, and pinch of red pepper flakes, 1 scallion, finely chopped, 1/4 cup olive oil. Whir everything in a blender until smooth.
Salad with croutons – salad greens
Garlic bread – French country loaf, basil
Tortilla soup – white onions, bell peppers, carrots

Vietnamese Crab salad in phyllo cups – carrots, onions, cucumber
Soo easy. You can buy the little premade phyllo cups (although I made mine fairly easily).
1/2 cup of nuoc cham
1 cup shredded carrot
1 cup shredded cucumber
2 tablespoons green onions
1/2 pound of lump crabmeat
A little mint would be nice but I didn’t have any. Throw everything in a bowl and mix until combined.
