Project Farmer’s Market- Week 5

This was a mix of going out and staying in.  I am looking for suggestions for new recipes because I am getting into a tex-mex rut.

Stacked enchiladas  with tomatillos salsa – green onions, yellow onions, tomatillos, avocado, poblano peppers, jalepeno peppers
Tomato salad – Early girl tomatoes

Gazpacho, crostini with carrot dip, Italian sausage – Early girl tomatoes (supplemented by tomatoes from our garden)Tomatoes – Early Girl, tomatillos (kinda like tomatoes)

Sliders with pickled onions – slider rolls
Salad with lemon vinaigrette and shaved parmesan – Salad greens

Eggplant dip – eggplant, red onion, red bell pepper, zuchinni
