Project Farmer’s Market – Week 6

Didn’t make as many meals as i wanted this week. Went out a lot but I did make a kicking tomato salad for a work potluck.

For the week –

Raspberries, blackberries, pluots and plums with yogurt
Gazpacho – early girl tomatoes, red onion

Thai coconut marinated chicken – cilantro, Thai Holy Basil
Peanut noodle salad – red bell peppers, green onions

1/4 pound of dried spaghetti
5 cups of vegetables (shredded napa cabbage, shredded carrots, julienne bell peppers, bean sprouts etc)
Dressing – 2 cloves garlic, 1 tablespoon of minced ginger, 1/4 cup soy sauce, juice of 1 lime, 2 tablespoons rice wine vinegar, 2 tablespoons of sweet Thai chili sauce, 1/4 cup of peanut butter all mixed in a food processor)

Roasted tomato soup – onions, basil, early girl tomatoes

Tomato salad – baguette for bread cubes, yellow tomatoes (and tomatoes from my garden, red onion, avocado)
Stacked enchiladas with tomatillo salsa – poblano peppers, zuchinni, jalepeno peppers
